4 3/8" Paring Knife in High Carbon Steel with Mesquite Handle

This is a standard paring knife for us, it offers great versatility for many small paring tasks from peeling to coring, and even small chopping tasks.
This paring knife measures just under 4 1/2" blade length and is made with 51200 High Carbon Steel. The Stabilized Mesquite Handle is locally sourced and has an excellent look to it. There are 3 - 1/8" brass pins in the handle and it comes with a felt lined kydex knife transporter.
Note: This knife is made with 52100 High Carbon Steel and will rust if it is left wet, dirty, or in any moist area. It must be cleaned and dried immediately after use. It will develop a patina in time and with cutting. If you like shiny knives, or do not wish to worry about the care of this knife, please consider a Stainless Steel knife. Chef's love high carbon blades because they sharpen easier and faster, and take a superior edge. Having said that, they are like cast iron and need a little more attention.
